Big Game Snack Ideas

When the big game comes around this weekend you need to have more game than chips and queso.

Caramelized Onion Dip
Sour Cream    2    #
Cream Cheese softened    6        oz
Onions chopped    2    cups
chives chopped     1/3     cup
beef base dissolved in 1tbsp water    1/2    Tbsp
Worcestershire sauce    1/2    tsp
salt         TT

1)    Heat a large sauté pan on medium high heat. Add 2 tbsp oil and onions. Cook until golden brown.
2)    Allow to cool and chop roughly
3)    Combine caramelized onions, sour cream, cream cheese, chives, beef base, and Worcestershire sauce
4)    Season to taste with salt
5)    Serve with potato chips and raw vegetables

Cider Braised Sloppy Joe Sliders
pork butt coarse grind     3.5    lbs
Cider    2    cups
tomato sauce plain 45 oz jar    1          ea
Brown sugar    1    oz
Onion Powder    1    Tbsp
Garlic Powder    1    Tbsp
Ground ginger    1    Tbsp
Cinnamon    1    Tbsp
Bay Leaves     2    ea
cider vinegar
slider buns    2
2    Oz

1)    Brown Ground Pork in a little canola oil until cooked through and all fat
               has been released
2)    Drain excess fat
3)    Add remaining ingredients and simmer slowly covered
               until mixture has thickened
4)    Spoon mixture on to the slider buns and serve

Dr Pepper BBQ Chicken Wings
Rootbeer    1    liters
Ketchup    3.5    lbs
A-1 Steak Sauce    1/2    Tbsp
Cider Vinegar    2     Tbsp
Onion Powder    1/2    Tbsp
Dry Mustard    1/2    Tbsp
Garlic Powder    1/2    Tbsp
Chicken Wings    5    lbs
 Salt & Pepper    To Taste

1)    Combine all ingredients in a sauce pot and whisk until combined
2)    Slowly simmer BBQ sauce  stirring frequently until thickened about 30 minutes
3)    Season Chicken wings with salt and pepper and place on a cookie sheet under broiler for 25 minutes
4)    Be sure to turn wings half way through
5)    Place wings in a bowl and toss with desired amount of sauce
6)    Return wings to cookie sheet and place under broiler for an additional 10-15 minutes or until wings start to brown
