Garlicky Spinach with Lemon & White Beans

Central Market stopped by to whip up a side dish that may be great for your muscles, but not so great for your breath.

Ingredients for Garlicky Spinach with Lemon & White Beans -

  • 2 Tbsp. olive oil
  • 4 cloves garlic, sliced
  • 1 tsp. red pepper flakes
  • 2 tsp. “Taste #5” Umami Paste (or 1 tsp. anchovy paste)
  • 2 10-oz. bags Oak Hill Farms Spinach, roughly chopped
  • ¼ cup chicken broth
  • 1 can white beans, drained and rinsed
  • Juice and zest of 1 lemon
  • Salt to taste

Heat oil in large pot over medium-high heat; add garlic, pepper flakes, and Umami paste and cook 1 minute.  Add spinach, turning with tongs as it wilts.  Add broth, cover pot, and reduce heat to medium-low; steam until spinach is just tender, 1-3 minutes.  Stir in white beans, lemon juice and zest, and season with salt, to taste.  Enjoy!
