Mother's Day Magic

A labor of love for the women in our lives who have gone through labor…

This Sunday is Mother's Day...and especially if your kids are really young...the responsibility for creating magic is all on the guys.

Chef Paul French of Southwest Bistro in the Hyatt Regency in Downtown Austin joined us in the studio with some ideas for making the women in our lives feel special

The Mother's Day brunch at the Southwest Bistro at the Hyatt Regency will go from 11:30 a.m. to 4:30 p.m. this Sunday. It's $58 for adults and $27 for children. Reservations are recommended.

Chocolate Mousse with Peanut Butter Crunch

3 cups mini marshmallows
1/2 stick unsalted butter, softened
9 ounces best quality semisweet chocolate, chopped into small pieces
1/4 cup hot water
1 cup heavy cream
1 teaspoon vanilla extract

Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
Put the saucepan on the stove, over heat, though keep it fairly gentle, to melt, stirring every now and again. Remove from the heat.
Meanwhile whip the cream with the vanilla until thick and then fold into the cooling chocolate mixture until you have a smooth,  mixture.
Pour or scrape into 4 or 6 glasses or small dishes and chill until set

Peanut Butter Crunch

1/2 cup creamy peanut butter
2 ounces milk chocolatechopped
2 1/2 cups cornflakes, lightly crushed
1/4 cup salted roasted peanuts, chopped

Line a medium baking sheet with wax paper.
In a medium, microwave-safe bowl, melt the peanut butter and chocolate at high power at 30-second intervals, stirring until smooth.
Stir in the cornflakes and peanuts and spread the crunch on the baking sheet in a 1/2-inch layer.
Freeze until firm, about 1 1/2 hours.
Chop into small pieces.

Pecan Crusted Cheesecake
Pecans Toasted         2 cups
Sugar            1/2 Tbsp   
Bourbon        3/4 tsp
Butter Melted        3 oz
Combine pecans and sugar in food processor and pulse until a fine crumb
Add bourbon and butter then spread mixuture into cake pan.
Bake at 350 for 10 minutes then remove from oven

Cheesecake Base
Cream cheese        4 lbs 2 oz
Sugar            1 ½ lbs
Eggs            8 each
Heavy Cream        1 ½ cups

In an electric mixer beat sugar and eggs together for 5 minutes
Add Cream cheese and cream and mix for another 5 minutes or until fully incorporated
Pour mixture in to pan with prebaked crust and bake at 275 degrees for 1 ½ hoursMother's Day Magic
