Whole Foods' Best Butcher Offers Tips For Cutting Meat

Tim Hegele, Whole Food's Best Butcher in Austin, dropped by to offer a little advise to improve our backyard cookouts.  He showed us how to identify the grain of a cut of meat and to cut against the grain to make the meat more tender.  He also showed us the difference between fat and marbling in a steak.  The fat is the thick white portion of the cut.  The marbling is tiny white streaks in the meat.  Hegele says the marbling is a good a thing:  It acts as a natural meat tenderizer and this fat melts away during cooking.  If you have any questions about meat and how to prepare it, ask the butcher.
